Stack-Dateien aus Live-Betrieb aufnehmen (compose.yaml, .gitignore, .sops.yaml)

Repo enthielt bisher nur README. Compose entspricht dem laufenden Stand auf
chris@10.7.1.101 inkl. NFS-Volume mit vers=3 (NFSv3-Server 192.168.7.106;
ohne vers= stirbt sonarrCL nach Reboot mit "NFS: Version unavailable").
